This talk will describe how the precision control of fluid mixing afforded by microfluidic devices can be used to make new structures that allow colloidal and interfacial phenomena to be studied in exquisite detail and that enable fabrication of structures that facilitate encapsulation and controlled delivery of a wide range of substances.
