Chemistry of the New Nutrition: A Science Requirement Course

John MacDonald, Fairfield University, Fairfield, CT

Old nutriton is based on the concept of RDA, Recommended Dietary Allowance, which by its accepted definiton is only "...adequate for most of the healthy population." New nutrition strives for the optimal allowance for the individual. An individual may not be healthy at that time or have a genetic abnormality. This distinction between the needs of a population and the individual, who may not belong to the normal population, is the focal point of my course Chemistry of New Nutrition. This presentation will be of some of my observations and course materials accumulated over the past three decades.
